Black Bean & Corn Salad

Ingredients:
  • 1/2 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cup black beans or 1 15 oz can (without BPA), drained and rinsed
  • 1 cup frozen corn, thawed
  • 8 cherry tomatoes, quartered
  • 1/2 cup diced red pepper
  • 1/4 cup chopped cilantro
  • 2 TBS extra virgin olive oil
  • 3 TBS fresh lemon juice
  • salt and black pepper to taste
Directions:
  1. Mix all ingredients together, except the cilantro, and refrigerate.  The longer you allow it to sit, the better the flavours will blend together.
  2. Just before serving, gently stir in the cilantro.
  3. Makes 4 servings.
